Crust:
1½ cups finely ground graham cracker crumbs
¼ cup sugar
5 tablespoon melted butter
Cheesecake:
16oz softened cream cheese
1 cup sour cream
1½ cup sugar
2 teaspoons lemon juice
1½ teaspoon vanilla extract
Toppings:
3 cups sliced strawberries
1 cup blueberries
In a large bowl add in graham crackers, sugar and melted butter. Mix well so that everything is fully incorporated.
Evenly press graham cracker into a casserole dish. Make sure to really press down so everything is packed together tightly. Place in fridge.
In large bowl, use an electric mixture beat together cream cheese, sour cream, sugar, lemon juice and vanilla extract. You can also use a whisk and wooden spoon if you don't have an electric mixer.
Spread cream cheese mixture evenly over crust.
Make the stars using blue berries in the top left corner of the cheesecake.
Make the red stripes of the flag by over lapping the strawberries.
Chill in refrigerator for at least 2 hours then serve.
